10 Oz Extra-lean Ground Turkey
1 Medium Onion, Diced
2 Cans Diced Tomatoes
2 Medium Zucchini, Diced
2 Medium Yellow Squash, Diced
1 cup Corn
2 cans Fat Free, Low Sodium Chicken Broth
1 Yellow Bell Peppers, Diced
5 Tbs Chili Powder
1 squeeze ketchup
1 squeeze yellow mustard
2 tsp thyme
2 oz tomato paste
2 tsp vinegar
2 Tbs garlic powder
2 Tbs kosher salt
2 Tbs freshly ground pepper
2 Tbs parsley
Directions
Spray large soup pot with Pam and set over med-hi heat. Add turkey and onion and saute until browned, about 5 minutes.
Add remaining ingredients. Bring to simmer over medium heat. Simmer until vegetables are tender, about 30 minutes.
Better if eaten next day.
