Quinoa with Roasted Vegetables

Introduction

This is a truly versatile dish. The quinoa is a light but hearty grain that is rich in protein and vitamins. Adjust the vegetables to use any local seasonal items. This dish is wonderful served hot or chilled. The dressing makes a larger amount than needed -- just drizzle on to taste before serving. This is a truly versatile dish. Ingredients

    2 C Quinoa
    1 C Summer Squash, chopped 1 inch cubes
    1 C Purple Onion, Sliced into wedges
    1 C Sweet Corn, slice kernals from cob
    1 C Carrots, chopped 1 inch cubes
    1 tbspn Olive Oil
    Salt/Pepper to taste

    Dressing
    .5 C Lime Juice
    .5 C Olive Oil
    1 tsp Garlic
    2 tsp Dijon Mustard
    2 tsp Honey, Agave or sweetener of choice
    Salt/Pepper to taste


Directions

Preheat the oven to 400 degrees F.
Cook the Quinoa using the directions on the package.
Chop all vegetables and place on a baking sheet (line with foil for easy clean up. Drizzle with 1 tbsn olive oil, sprinkle with salt/pepper and toss to coat. Cook in 400 degree oven until veggies are tender and starting to brown. It should take 30-40 minutes. In a separate bowl, whisk all dressing ingredients together.

When Quinoa and vegetables have finished cooking, combine both in a large bowl and mix. Add dressing to taste to entire bowl and serve or reserve the dressing and offer it on the side.

Makes 8 1-cup servings.
Note: The nutritional info is calculated with the full amount of dressing. Dressing makes aproximately 16 tablespoon size servings. Each serving is approximately 66 calories.
