CHICKEN PITA MELT SANDWICH

Introduction

This is a recipe I just came up with today for a quick lunch. It took only about 5 minutes to make. This is a recipe I just came up with today for a quick lunch. It took only about 5 minutes to make.

Ingredients

    1 6 inch Sahara Wheat Pita, uncut
    1-1/2 tbsp lowfat ranch or blue cheese salad dressing
    1/4 c. chopped cooked skinless chicken breast
    1/4 c. shredded cheddar or colby jack cheese
    1 slice American cheese, cut in half
    1/4 tsp Italian seasoning
    1/4 cup chopped or shredded lettuce

Directions

Place pita on a microwave safe plate covered with waxed paper. Spread the dressing evenly over the surface of the pita. Place the chopped chicken on 1 half of the pita and top with the shredded cheese. Place the 2 halves of the American cheese on the other half of the pita. Sprinkle the Italian seasoning over the cheeses, both sides. Microwave on HIGH for 1-1/2 minutes to melt the cheeses and warm the chicken. Remove from microwave and top with the lettuce. Fold in half and tightly tuck the waxed paper around the sandwich. Let it set for 2 minutes to cool slightly, then unwrap and enjoy. Makes 1 sandwich.
