Surprise Breakfast Muffins

Introduction

Nice as breakfast or sweet snack.
Can be made just as nicely with egg replacer and soy milk for a vegan variety.

Ingredients

    1 cup oats
    1 cup wholewheat flour
    1 cup semiskimmed milk
    1 tsp baking powder
    .5 tsp baking soda
    1 medium egg
    .25 cup olive oil
    .5 cup raw sugar
    .5 cup chopped apple
    Cinnamon if desired :)

Directions

Preheat oven to 400 F/ 204 C. In a large bowl mix together all dry ingredients (except sugar). In a small bowl, mix together oil, sugar and beat in the egg. Pour in the contents of the small bowl and stir together. Then gently stir in the apple. Fill muffin tin half-way and then add a teaspoon dollop of strawberry jam into the centre of the mix. Cover over with another spoonful of batter until each tray is no more than three quarters full. Bake for 25 minutes or until toothpick comes out clean.
Can use alternative filling (such as nutella, marmelade, or a fresh strawberry!) Also nice to sprinkle tiny bit of raw sugar on top before baking, or crushed nuts... but need to adjust calories in these cases.
