1-1/4 C brown rice flour
1/4 C oatmeal
2 tbsp ground flaxseed
2 tsp baking powder
1/2 tsp salt
1/2 C Egg Beaters
1/2 C Fage Total 0% Greek Strained Yogurt
2 tbsp Sweet Fiber all natural sweetener
2 tbsp agave nectar
2 tbsp Enova oil
1-1/2 C fresh or frozen bluberries
2. In large bowl, whisk together flour, oatmeal, flaxseed, baking powder, and salt.
3. In a small bowl, whisk together Egg Beaters and yogurt. Whisk in the sweetener, agave nectar, and oil. Add to the flour mixture and combine just until the dry ingredients are moistened. Carfully fold in the blueberries.
4. Bake for 20 minutes or until wooden pick inserted in the center comes out clean. Transfer to wire rack and cool slightly.
