Introduction

Ingredients

    1/2 cup roasted red peppers, diced
    8 stalks asparagus, steamed then cut into small pieces (~1/2 cup)
    1 cup baby spinach leaves
    2 egg whites
    1 whole egg
    1/2 tsp. extra virgin olive oil
    salt/pepper/other spices to taste

Directions

In a small bowl, whisk together egg whites and whole egg. Set aside.

In a small non-stick skillet, heat 1/2 tsp. extra virgin olive oil. Add baby spinach and asparagus pieces. Saute just until spinach starts to wilt, then add roasted red peppers. Season with salt, pepper and any other spices you like.

Pour egg mixture over veggies. Push sides of egg mixture so the wet egg from the middle moves to the side - do not stir! If you have wet egg still in the middle, take your spatula and poke holes through to the bottom.

Frittata is done when egg on top is set. Do not stir or flip! Slide egg out onto a plate -- enjoy!
