Introduction

These muffins are flavored with real pears but there are no fruit chunks in them. These muffins are heavy, filling and make for a good breakfast on the go. I usually freeze half and take them out as needed on my way to work. By the time I get there they are thawed and I have a healthy breakfast to start the day! Ingredients

    2 cups canned pears
    1 1/2 cups all-purpose flour
    3/4 cup whole wheat flour
    2 tsp baking powder
    pinch of salt
    1/3 cup packed brown sugar
    1 lightly beaten egg
    4 tbsp vegetable oil
    1/2 cup whole milk

Directions

Preheat oven to 350 degrees. Grease a 12 cup muffin pan.

Puree the pears in a food processor. In a medium bowl, combine the flours, baking powder, salt and sugar.

In a large bowl, beat the egg, oil, and milk with an electric mixer until combined. STir in the pear puree, then add the flour mixture a little at a time and mix until just combined.

Using an ice cream scoop for portion control, scoop the mixture into the prepared pan. Bake for 20 minutes. Remove pan from the oven and cool for 5 minutes. Then remove muffins to cool on a baking rack.

Store in an airtight container and keep for up to 3 days or freeze for up to 3 months!
