Pork Breakfast Sausage

Number of Servings: 16

Ingredients

    2 pounds extra lean ground pork (we grind our own)
    2 tsp dried sage
    2 tsp sea salt
    1 tsp ground black pepper
    1/4 tsp dried marjoram
    1 Tbsp brown sugar
    1/8 tsp crushed red pepper flakes
    1 pinch ground cloves

Directions

1. In a small bowl combine all seasonings and spices. Mix well.
2. Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into 16 patties (4 per 1/2 pound of meat).
3. Saute the patties in a large skillet over medium high heat for at least 5 minutes per side, or until internal pork temperature reaches 160 degrees F.
4. Alternatively, you can package the raw sausage and freeze it in whatever size packages you desire.
