Spinach Frittata Muffins

Introduction

A modified version of Coach Nicole's Mini Vegetable Frittatas using the veggies and cheese I had on hand. A modified version of Coach Nicole's Mini Vegetable Frittatas using the veggies and cheese I had on hand.

Ingredients

    7 large eggs
    3 tablespoons whole milk
    1/2 cup Trader Joe's Francy Shredded Mexican Blend Cheese
    1 cup tomatoes, diced
    1 cup frozen chopped spinach, thawed
    salt and pepper to taste

Directions

Lightly grease 12-muffin tin with extra virgin olive oil spray. Preheat oven to 350 degrees.

In a large bowl, beat eggs with milk. Add vegetables and cheese; mix well. Add salt and pepper to taste.

Pour mixture evenly into muffin tin. Cook for approximately 20 minutes or until tops of "muffins" look set.
