Ingredients

Onions, raw, 1 cup, chopped
Clarified butter/Ghee, 2 tbsp
Cashew Nuts, dry roasted (salt added), .25 cup, halves and whole
Aromatic Basmati Rice, White or Brown, 12 oz
Bay Leaf, 1 tbsp, crumbled
Saffron, .5 tsp
Salt - to taste ( I don't use any)
Directions
Soak rice in 1/2 tsp salt and water for 30 minutes. Drain and rinse well.
Heat ghee in a sauce pan, add onions and cook till beautiful golden brown. Drop the cashews, bay leaf and cook another 30 seconds till they are roasted. Stir in the rice and cook till it's puffed up. Pour the mixture in a rice cooker with 2 1/2 cups of water. Let cook.
Serves 9 at 1/2 a cup each. You can freeze or refrigerate the left overs. Your whole home will be fragrant for the next couple of days, sweet aroma of saffron!
Serve with any Indian style sides dishes.
