Black Beans and Rice

Introduction

This makes a delicious bean and rice soup-like dish. I like putting a small dollop of sour cream on top but a little shredded cheddar would taste good too! I've even eaten this for breakfast with a small scoop of cottage cheese! This makes a delicious bean and rice soup-like dish. Ingredients

    *Goya Black Beans, 2 cans
    Peppers, red
    Onions, raw, 1 medium
    Celery, raw, 2 stalk, large
    Garlic, 5 cloves
    1 tbl EVOO
    *Brown Rice, long grain, 1 cup
    Chicken stock, home-prepared, 2 cup


Directions

Start 1 cup rice cooking in 2 1/4 cups water. Bring to a boil, cover, reduce heat and simmer for about 30 minutes.
While rice is cooking, rough chop all vegetables and saute lightly in EVOO. After they have softened, add beans and broth. Allow to cook on a low temperature until completely heated through and rice is done cooking. Using a blender or stick blender, puree bean mixture until mostly smooth (slight chunks are nice). Add rice to mixture. If you like things with a kick, while the beans and veggies are cooking you can add crushed red or cayenne pepper. Makes about 6 one cup servings.
