Chicken w/Prosciutto, Spinach, and Mozzarella

Ingredients

    1 T olive oil
    2 chicken beasts
    2 slices prosciutto
    1 cup fresh spinach
    4 thin onion slices
    2-3 plum tomatoes, sliced
    4 slices part skim mozzarella

Directions

Preheat oven to 350.
Brush baking dish bottom w/ olive oil.
Slice chicken breasts crosswise and arrange in even layer on baking dish.
Layer remaining ingredients (prosciutto through mozzarella) over chicken in order listed.
Bake for 30 minutes or until chicken is no longer pink inside.
Makes 4 half-breast servings.
