11 ounces whitefish
3 tablespoons reduced fat mayonnaise
2 teaspoons dijon mustard
3/4 teaspoon minced fresh chives
1/8 teaspoon black pepper
1/2 ounce minced green olives with pimento (about 2 tablespoons)
1/8 cup panko bread crumbs (about 2 tablespoons)
2. Combine the mayo, mustard, chives, pepper and olive in a small bowl and stir to combine.
3. Pat the whitefish dry. With a spatula, spread a small amount of the olive mixture on the skin side of the fish and place in down in the baking dish. Spread the remaining olive mixture over the top of the fish. Sprinkle with the bread crumbs.
4. Bake for 10-12 minutes until the fish is done and flakes easily.
