Zucchini-Sauerkraut Loaf

Introduction

I found this recipe on a bag of sauerkraut and modified it just a bit to lower the calories and salt. It would make a wonderful vegetarian entree.

Number of Servings: 6

Ingredients

    3 cups coarsely grated zucchini, or yellow summer squash, or a mixture of the two varieties (14-15 ounces)
    1 cup grated potato, with or without the skin (4 1/2 ounces)
    3/4 cup sauerkraut, thoroughly drained
    2 tablespoons grated onion
    2 tabelspoons oil
    1/2 cup egg substitute
    1/4 cup flour
    3/4 teaspoon baking powder
    1/8 teaspoon pepper

Directions

1. Pre-heat oven to 350 , and spray a 7x11-inch loaf pan with spray oil.

2. Drain the grated vegetables, if watery.

3. In a large mixing bowl combine all the ingredients. Stir well. Spoon mixture into loaf pan and smooth the top.

4. Bake uncovered for 60-75 minutes until the top is browned. Allow to cool for a few minutes before serving.
