Coconut Rice

Ingredients

    White Rice, long grain, 2 cup
    Coconut Milk, 2 cup
    Water, tap, 1 cup (8 fl oz)
    Cinnamon, ground, 1 tbsp
    Salt, .25 tsp
    Limes, 1 fruit

Directions

Wash rice and combine in saucepan with other ingredients except lime.

Bring to boil, lower heat, cover and simmer for apprx. 15 min. Add zest of 1 lime, stir with fork, cover and let sit for 10 minutes

    I've made this with brown rice, and without lime. Will try adding lime next time... curry powder also works, instead of cinnamon. Basically, you're substituting coconut milk for part of the water. - 9/7/07

    that's a LOT of rice for only 4 people! 2 cups uncooked can make up to 6 cups cooked. - 9/21/07
