I happen to stumble on this for breakfast when I wasn't sure what to eat....quick and refreshing! You could substitute other fruit as well... Ingredients

2 - slices whole wheat bread (3 grams fiber)
2 - tbs ricotta part-skim
1 - mango either sliced or diced (put 1/2 on slices and enjoy the rest of the mango on it's own!
Toast bread, spread 1 tbs of ricotta on each slice, place mango on top and top with some cinnamon for extra taste.
Directions
Only cooking required is toasting the toast!
