Ingredients

    8 ounces chicken breasts, halved and pounded thin
    1 cup Panko Japanese breadcrumbs, seasoned with thyme, paprika and parsley
    1 egg, beaten
    4 slices swiss cheese
    4 1/4" thick slices smoked ham (Not sandwich ham)

Directions

Slice two chicken breasts in half and pound under plastic wrap until 1/4" thick. Place once clice of ham and one slice of cheese inside and roll up, securing with toothpicks. Roll in egg wash and then seasoned panko crumbs to coat. Bake at 350 for 60 minutes or until chicken is cooked through. Serve with 2 TBSP of Knorr's Bearnaise sauce if desired.

  • OMG this sounds to die for! I never would have thought to use panko for cordon blue but it sounds so yummy and I can't believe the calories are that low. THIS is tonight's dinner for sure! Thanks so much for sharing this! - 6/20/09

    I kind of hodgepodged it together from several recipes I found online and it was AMAZING! Adding the sauce does up the calories and fat a bit, but even then, it tastes like heaven and is still way lower than what you would be served in a restaurant. Let me know how it works out!
