Number of Servings: 12

Ingredients

    1.5 C Flour
    3/4 C Splenda
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2/3 C plain non-fat yogurt
    2/3 C water
    3/4 C Blueberries (can sub. other fruit)

Directions

Combine and mix dry ingredients. Then add water and yogurt, mix then add berries and stir carefully. Fill greased muffin cups 3/4 full. Bake at 400 F. for 18 minutes.

    I used WW flour and vanilla fat free yogurt. These are good, and will freeze them to have on hand for a quick breakfast with a smoothie, or for a sweet, low-cal snack. - 3/21/09

    Excellent. I added more blueberries and I think it was too many. They were very sweet so next time I think I might add applesauce instead of sugar like some of the others. But I am so looking forward to using this is a basic recipe and I love that the ingredients in natural. I also used wheat flour. - 3/2/09

    Good muffins! I used all whole wheat flour. I also substituted unsweetened applesauce for the splenda and then only added 1/4 c. water. This made for a great texture. The only thing I would differently the next time would be to add 1/4 c. of the splenda or sugar to add a little sweetness.... - 5/24/10

    As a non-cook, I was surprised by how quick and easy muffins are to make. I substituted applesauce for the yogurt, whole wheat flour for white, and used fresh-picked, wild blueberries; they were so good that my boyfriend, who dislikes anything sugar-free or whole wheat, loved them! - 7/15/07

    I used 8 packets of splenda, 1/4 cup of applesauce, 1/4 yogurt and eyeballed the water to get a smooth consistency. Instead on muffins, I dropped them by the teaspoon full on a cooking sheet sprayed w/ nonstick spray. The recipe made 24 instead of 12 since I did not use a muffin tin. - 6/2/10

    I used 1/2 whole wheat flour and 1/2 white flour. I also added walnuts and greek yogurt to up the protein............this also adds calories. These were WAY too sweet for me. Next time, I'll cut the splenda in half. - 8/2/10

    Hard to believe these are lower in calories! Made for a church brunch item and they were very good! Did replace the Splenda with sugar but didn't do the full measurement. Also used blueberry yogurt. Would definitely make again. Although my version was higher in calories, these are very filling. - 6/1/10

    I followed the recipe except used 1/2 cup sugar instead of splenda. They were terrible--chewy, doughy, and no taste. I've reread the ratings and double checked the recipe. How can mine be so far off? - 8/28/10

    I used 1 cup of wheat flour half of white. I also used 2 tbspn of stevia instead of splenda. The only saving grace on these were the blueberries. My kids really didn't like them. I also didn't. I would rather use real sugar and have more calories to have a better tasting muffin. - 7/1/10

    Used all WW Flour, 1/4 cup Baking Splenda, Applesauce in place of yogurt as I was out. A bit doughy, will try some of the other suggestions and with the yogurt - 9/13/09

    I only used 1/4 of Stevia yet the I have found my muffins too sweet... Next time I will try with Apple sauce. My kids and I had lots of fun baking together this snowy day we were locked in! Thank you for sharing this recipe! :-) - 3/2/09

    I made these muffins and they were dynamite. If you are on weight watchers diet they are only 1 point per muffin. You can't beat that..excellent recipe - 1/23/08

    These were awesome! I too used vanilla yogurt. I also did 1/2 c. ww flour and 1 c white. Next time may use all ww. My daughter claims she doesn't like ww flour so didn't want to do it all that way. Will definately make again! - 12/8/07

    I made these tonight for the first time and I loved them. I used frozen blueberries and non-fat vanilla yogurt. I'm planning on freezing them and using them to go with my breakfast for the next week.

    I'll be testing them in the morning with my daughter! I'm sure she'll love them too. - 10/8/07

    I used whole wheat flour in lieu of white, and it was so thick that I had to add another entire cup of water! Next time I think I will change it to 1-1/3 cup water and 1 cup yogurt. That might help a little. - 8/9/07

    Came out great, fluffy and delicious! I don't do the fake sugar thing (I hate Splenda) so mine definitely had more calories, but I still think this is a great recipe for a grab-on-the-go breakfast. - 7/22/07

  • Found out 3 weeks ago I had 2 give up sugar:( found your web-site :). Tried the blueberry muffins and they were awesome. I used applesauce instead of Splenda. But I live in the high desert and with the high altitude the cooking time is 15 min I burn the first batch since I made like cookies - 11/7/12

  • I used greek yogurt this time instead of regular yogurt to give it added protein. I must say that both ways (regular non-fat yogurt & greek yogurt) come out with the muffins being "chewy".     I can't figure out how the sodium levels in your nutritonal info is so low. When I did the calculation only changing to whole wheat flour, and reg yogurt, the sodium level is 292.6. How is yours so low??? - 2/4/10

    Is it possible the sodium calculation for this recipe is off? There is only 1/2 tsp of salt and a tsp of baking soda but the sodium per muffin is 193.5. Isn't that a bit high? - 1/16/10

  • I wanted these but didn't have any yogurt....I used 1/2 cup unsweetened applesauce and just a tad over a tbl of oil. Also added 2 packets of that Crystal Light To-Go-Packs of Lemonade and some poppy seeds. The lemon taste made them really good...I wish I had added another Crystal Light To-Go-Pack. - 6/16/07
