Magic Low-Fat Strawberry Cinnamon Muffins

Introduction

I got this recipe from the Teenage Diet where the food tastes good and really pushes for healthy eating - although I am not a teen I love this recipe! Ingredients

    Cooking spray!
    1 1/2 cups whole wheat flour
    1/2 cup plus 1tablespoon packed brown sugar
    2 1/2 teaspoons baking powder
    1 1/2 teaspoons ground cinnamon
    1/4 teaspoon salt
    2/3 cup nonfat vanilla yogurt
    1/4 cup margarine, melted
    3 tablespoons non-fat milk
    1 large egg - lightly beaten
    1/4 cup smuckers strawberry jam, no sugar added

Directions

1. Preheat oven 375. Put muffin liner into each cup of a 12 cup muffin pan, coat liners with cooking spray!
2. Lightly sppon flour into measuring cups & level with knife!
In large bowl, combine flour, 1/2 cup brownsugar, baking powder, 1 teaspoon cinnamon, and salt - whisk well!
3. In small bowl, combine yogurt, margarine, milk and egg - whisk well!
4. Make a well in the center of the flour mixture. Add the yogurt mixture to the flour mixture and stirring just until moist.
5. Spoon in 1 tablespoon of batter into each muffin liner. Top the batter with 1 teaspoon jam. Top evenly with the remaining batter.
6. Combine the remaining 1 tablespoon brown sugar and 1/2 teaspoon of cinnamon; sprinkle over batter. Bake for 20=25 minutes until lightly brown on top.
7. Remove the muffins from pan and place on wire rack to cool & enjoy!
