Altered Ellie Krieger Breakfast Cookies (Banana)

Ingredients

    1.5 cup whole wheat flour
    1 cup all pupose flour
    1 t baking soda
    2 t ground cinnamon
    1 t ground nutmeg
    .5 t salt
    4 T butter
    .5 cup canola oil
    .5 cup brown sugar
    6 T granulated sugar
    2 eggs
    .5 cup banana
    2 t vanilla
    1 cup rolled oats
    1 cup Smart Start Toasted Oats
    2/3 cup raisins
    2/3 cup chopped walnut pieces, lightly toasted in dry skillet for 2 minutes
    .25 cup mini chocolate chips

Directions

Whisk dry ingredient in medium bowl. Combine butter, oil, sugars in a larger bowl on high speed until sugars have dissolved and mixture is light in color. Add egg, banana, and vanilla and beat 30 seconds. Add dry mix and beat for another 30 seconds. Add remaining ingredients and mix on low speed until combined. Use 3-4 T of batter to form a ball and place on cookie sheet, and flatten. Cook for 12 mnutes or until fragrant but still soft. Cool.
This batch made 19 for me.
