This soup is great for bulk cooking for the week. It is easy to make and is high in protein, fiber, and iron. To save even more time, use a rotisserie chicken from your local market. Number of Servings: 8

Ingredients

    Chicken breast- from rotisserie chicken, skin removed and shredded or chopped.
    10 oz package of spinach, thawed and drained.
    1/2 red onion diced
    1/2 cup sun dried tomatoes- julianned or chopped
    2 cloves of garlic minced
    1 can red kidney beans
    1 can pinto beans
    1 can garbanzo(chick) beans
    1 48oz container of low sodium 99% fat free chicken broth
    1 tsp dried thyme
    1 tsp dried marjoram
    1 dash of salt

Directions

In a 4 quart pot, heat olive oil over medium heat. Add onions, sun dried tomatoes, and garlic. sprinkle a dash of salt on to sweat onions. Saute till onions are soft and clear. Add dried herbs and saute for 1 minute longer. Add chicken stock, beans, chicken and spinach. Simmer on low heat for 20 minutes. Makes approximately 8 1-cup servings.
