Spicy Tomato, Courgette And Chick Peas

Introduction

Lovely, filling and low in calories- This meal is quick and easy and the courgette can be substituted for your own favourite vegetables.
It's great with brown rice, sliced pitta bread, Quinoa or cous cous so take your pick!

Number of Servings: 4

Ingredients

    190g Tinned Chick Peas
    1 Can Tinned Chopped Tomatoes In Juice (400g)
    155g Courgettes
    40g Red Onions
    2 Cloves Garlic
    1 tbsp Olive Oil
    1 tsp Brown Sugar
    1-1/2 tbsp Tandoori Masala Spice Mix
    Dash Salt & Pepper (or to taste)

Directions

Drain Chick Peas
Slice courgette
Dice Onion
Finely Chopped Garlic

Heat olive oil in pan then add diced onion, chopped garlic and cook till softened.

Add sliced courgette and cook for few minutes until slightly softened, add tandoori spice, salt and pepper and stir till all ingredients are well coated.

Add drained chick peas, tinned tomatoes and sugar to pan- stir till tomato juice reduces and thickens.

Makes 4 1/2 cup servings.
