quinoa tofu scramble

Ingredients

    .25 cup quinoa
    .5 cup kale
    .33 cup mushrooms, dried or fresh
    1 tsp olive oil
    1 oz lemon juice
    45 grams firm tofu
    1 medium slice onion
    1 cup water

Directions

add .25 cup water & quinoa. stir & cook on medium for 5 minutes. add another .25 cup water & add tofu, crumbled. repeat cooking process, & add remaining water, along with onion slice, mushrooms & kale. cook for 2-3 minutes, then serve with oil & lime juice.
