Chole (Curried chick peas)

Introduction

This tastes good on baked potatoes ( zapped in the micro wave for 5-6 minutes depending upon its size, wrapped in a foil for thorough cooking, split in half and scoop half a cup of chole in it) topped with shredded cheddar cheese, zap till the cheese has melted and serve as a fusion food for kids. Ingredients

    Goya organic chick peas, 2 cup
    Onions, raw, .5 cup, chopped
    Contadina Tomato paste, 5 tbsp
    *Cumin seed, 1.5 tbsp
    *Coriander powder, 1 tsp
    Turmeric, ground, .5 tsp
    Chili powder, 1 tsp (use paprika if you can't handle spicy taste)
    Water, 1 cup (8 fl oz)
    *Hot green Chili Peppers, 1 pepper
    Cilantro, raw, 4 tbsp
    Olive Oil, 2 tbsp

Directions

Heat Olive oil in a pot and drop chopped onions. Cook till golden brown. While the onions are cooking, in a small sauce pan, roast the cumin seeds ( I usually roast the cumin seeds, coarsely grind in a mortor & pestle and store in an air-tight tin) and coarsely grind, set aside. Stir in the coriander powder, red chili powder and fry till fragrant. Add the tomato paste and coarsely ground cumin, fry till oil is separated from the paste. Add the turmeric powder, chick peas and water. Cook till all the spices are well blended. Take the stirring, serving spoon and mash a few chick peas to thicken the sauce. Garnish with cilantro.

Chole is so versatlle just like most Indian dishes - that can me prepared in variety of ways to suit one's taste. Some times I like to add fresh curry leaves ( and mustard seeds krackled and then, add onions to the oil and brown it) to the fried onions for a change of taste. You can also add ginger but, my kids when they were young, never really liked the taste of ginger for it made Chole taste spicier. You can also sprinkle garam masala before you serve and mix well. If you like raw red onions, chop 1/2 medium onion, soak in Juice squeezed of 1/2 a lemon for a couple of minutes and pour over the Chole just before you serve for a tangy taste.

This makes a great side dish for chappati, listed separately here again for nutritional values.

  • I think my spices are old which is why they didn't come out so much but I enjoyed it very much. I break it up into the servings into containers. Then take those to lunch and put it over rice. - 11/2/09

    A little more than 1/2 cup. Since you are using 2 cups of canned chick peas, add to that tomatoes, the whole dish is enough for 4 servings .
