Cherry/Berry Crumble

Introduction

This recipe uses very little processed sugar, fat or salt. It relys on the natural sugars in the fruit, highlighted by the sweetness in the balsamic vinegar. I know it sounds unusual, but it tastes great.

Ingredients

    FRUIT FILLING
    2 1/2 cups sweet cherries with pits removed or any combination of berries- be creative
    1 tablespoon balsamic vinegar
    2 tablespoons tapioca (dry)

    TOPPING
    3/8 cup old-fashioned oatmeal (dry)
    2 tablespoons flour
    1 tablespoon brown sugar
    1 tablespoon chopped pecans (or your favorite nut)
    2 tablespoons cold light butter, cut into small pieces

Directions

1. Preheat oven to 325

2. In a sauce pan combine the fruit, vinegar and tapioca. Heat over medium-low heat until the fruit mixture is very hot and the juices begin to thicken. Pour into a small casserole or baking dish coated with cooking spray.

3. In a mixing bowl, combine the topping ingredients, adding the cold butter last. Using a pastry knife, cut in the butter to the dry ingredients until the butter is well incorporated and the mixture is kind of chunky. Spread the topping over the hot fruit.

4. Bake for 30-40 minutes until the topping is brown. Allow crumble to cool for 5-10 minutes before serving.

Options; Serve with a dollop of whipped topping or a small scoop of vanilla ice cream/frozen yogurt.
