Creamy Sauerkraut & Chicken Sausage CasseroleSubmitted by: DILBERTA
2 pounds sauerkraut, drained & rinsed well
1 medium onion, chopped
1/2 cup apple juice
1/3 cup light mayonaise
2 tablespoons chili sauce (I use Bennett's)
1/8 teaspoon pepper
1/8 teaspoon paprika
6 Member's Mark Gourmet Roasted Garlic & Mozzarella Chicken Sausages (from Sam's Club) or your favorite chicken/turkey sausage
2. In a large mixing bowl, combine all the ingredients, except the sausage. Mix well. Spoon the sauerkraut mixture into a large casserole coated with spray cooking oil.
3. Nestle the sausages down into the sauerkraut mixture. Note: If you are using the Member's Mark sausages, don't cut them into pieces or the mozzarella cheese inside will melt out into the sauerkraut.
4. Bake about 30 minutes until the sausages are hot and the sauerkraut mixture is bubbly.
