Red Lentil Sweet Potato Soup

Introduction

This recipe was so easy to make. I got this from an allergy cookbook (since they tend to have healthier recipes) and love it! It is listed as being free of dairy products, wheat, yeast, corn, sugar, eggs, soy, nuts, nightshades, and gluten. I put 3 servings, but that is if you want this soup as a main course... if you're having it as an appetizer then the calories would be less. This recipe was so easy to make. Ingredients

    - 2 Tbsp olive oil
    - 1 cup red lentils (250 ml)
    - 4-5 cups water (1-1.25 L)
    - 3 large carrots, sliced
    - 1 medium onion, diced, or 1 leek, finely chopped
    - 1 large sweet potato, sliced
    - 1 tsp sea salt (5 ml)
    - 1 tsp cumin (5 ml)
    - 1 tsp fresh grated ginger (5 ml)

Directions

Wash lentils and discard any foreign objects.

In a soup pot, saute onion or leek in oil for 5 minutes. Add cut-up sweet potatoes, carrots, ginger, salt, and cumin and cook in the oil for a few minutes. Add lentils with water.

Simmer soup on low for 30 minutes, stirring occasionally. Puree soup in your food processor or use a hand-held mixer. This makes quite a thick soup.
