Ingredients

    2 cups onion
    3 cups eggplant cubed
    s cups yellow squash
    1 large portabello mushroom
    .5 cup bell pepper
    2 cups traders giotto's organic mariniara sauce
    2 tbsp vegetable or olive oil for sauting
    vegetable broth

Directions


cube all vegetables
saute in oil, add broth as needed
after all veggies are carmelized add marinara sauce and simmer till done (20 mins or more)
