3/4 C. Cottage Cheese
3 eggs, seperated
1/5 C.. Flour
1/4 tsp. Salt
Whip egg whites to just stiff peaks. Set aside. Mix egg yolks, add cottage cheese, flour and salt. Mix until blended. Gently fold in egg white mixture until blended, do not over mix. Cook on griddle.
These pancakes tend to take a little longer to cook than your average pancake since there is more egg in them than flour. Store in warm oven until finished cooking all pancakes. Serve.
