Spicy Fish Stew

Ingredients

    1 tbsp olive oil
    2 cloves garlic, crushed
    1 tsp ground cumin
    1/2 tsp paprika
    1/2 a 400g can chopped tomatoes
    1 red pepper, deseeded, cut into chunks
    450g white fish, cut into chunks
    1 tbsp chopped coriander (cilantro)
    1 lemon cut into wedges

Directions

1. Heat the oil in a saucepan. Tip in the garlic, cumin and paprika and cook for 1 minute.

2. Add 100ml water and the tomatoes. Bring to the boil then turn down the heat.

3. Add the pepper and simmer for 5 minutes. Add the fish and simmer for another 5 minutes. Scatter with the coriander and serve with a wedge of lemon on the side.

Serve with fresh crusty bread.
