J's Yummy Pasta Salad

Introduction

Quick, easy and great for cook-outs, pot-luck dinners or a picnic. I make my own dressing so I can control the fat. My husband loves this pasta salad. The dressing makes it special. Ingredients

    Salad Ingredients:

    -12 oz Package Skinner Garden Style Twirls
    -12 med size baby carrots - sliced thin
    -14 small Small Spanish Olives w/Pimento (cut in half)
    -1/8 Med Green Bell Pepper - diced
    -1/4 Med Yellow Bell Pepper - diced
    -12 Marinated Mushrooms - cut in half
    - 1/8 cup Green Onion - sliced
    -1/4 cup grated Parmesean cheese


    Dressing:

    - 1 clove garlic (minced)
    -1/4 cup olive oil
    -3 T Balsamic Vinegar
    -1/8 cup Rice Vinegar
    - Salt to taste
    - Fresh Ground Pepper to taste

Directions

-Cook Pasta till just done - not too soft

-Add all ingredients (except dressing ingredients) and stir

-Combine dressing ingredients and wisk together

-Pour dressing over pasta mixture and refrigerate at least 1 hour.

This salad is even better the next day.
