Egg-Mustard-Potato Salad

Introduction

This recipe is a combination of my family's two favorite kinds of potato salad - egg & potato salad and mustard potato salad. It's a definite hit for lunch, dinner, picnics, or barbecues! This recipe is a combination of my family's two favorite kinds of potato salad - egg & potato salad and mustard potato salad. It's a definite hit for lunch, dinner, picnics, or barbecues!
Number of Servings: 12

Ingredients

    1 Cup mayonnaise (I use Hellman's)
    2 Tbsp. mustard (dijon or spicy brown work best)
    2 Tbsp. chopped fresh dill weed (or 1.5 tsp. dried)
    4 Cups boiled red potatoes (skin left on), cut into pieces
    1 Cup sliced radishes
    1/2 Cup sliced scallions (green onions)
    3 hard-boiled eggs, chopped

Directions

The cooking time above is for boiling the potatoes.

-Wash and cut up the potatoes, and boil them for 15 minutes.
-Drain the potatoes, and put in the refrigerator to cool while you are preparing the rest of the recipe.
-In a large bowl, combine the first 3 ingredients.
-Stir in the remaining ingredients.
-Cover and chill (although it's delicious warm, as well)

Makes 12 half-cup servings.
