Broccoflower Salad

Introduction

Just like the salads with both broccoli and cauliflower. It's just that I had the broccoflower and it needed to be used up. This is a great salad with lots of color, texture and flavor. You probably could make this even less calories by using a sugar substitue but we like honey and it works well in this recipe Just like the salads with both broccoli and cauliflower. Number of Servings: 4

Ingredients

    1 head broccoflower, chopped in to bite sized bits
    1 carrot, julienned
    1 onion, sliced very thin
    4 slices Oscar Mayer turkey bacon
    1/2 cup Miracle Whip light
    2 Tablespoons vinegar
    1/4 cup honey
    1/2 cup Kraft shredded 2% cheddar

Directions

Preheat oven to 400. Place turkey bacon on cookie sheet and cook for 10 minutes watching to make sure it does not burn. Once out of the oven, blot off any visible oil with folded paper towels. Once cool, chop into small bits and save. wash and chop broccoflower into small bits. Add carrots and onions. Mix Miracle Whip, honey and vinegar in small bowl and pour over veggies and toss. Add cheese and bacon, tossing one last time. Serves 4 generously
