Breaded Cauliflower

Introduction

A perfect side dish for fish, pork chops, and steaks - delicious and very easy, yet low calorie! A perfect side dish for fish, pork chops, and steaks - delicious and very easy, yet low calorie!
Number of Servings: 4

Ingredients

    - 2/3 head of cauliflower, large, chopped into size desired.
    - 1/4 cup dry bread crumbs (I make my own from whole wheat bread).
    - 3 tablespoons light margarine (I use Becel Light).

Directions

- In large pot, bring water to boil; add cauliflower and salt to taste. Reduce heat to medium. Cook about five or six minutes.

- While cauliflower is cooking, melt margarine in a saucepan on medium heat. Once melted, add bread crumbs and stir them into the margarine. Stir constantly on medium heat until the texture is crumby and the bread crumbs are browned.

- Once cauliflower has been cooked, drain well. Dump the cauliflower into the sauce pan and stir to coat the pieces with the bread crumb mixture.


This makes at least four good side servings in the average meat and potatoes meal. It usually makes three servings for my family, because we skip the potatoes when we make this!
