Lamb Barley Lentil Stew

Ingredients

    1 onion, chopped
    2 stalks celery, chopped
    3-4 carrots (about 1/2 LB), chopped
    2 cloves garlic
    1 slice of lamb leg (about 1 LB), chopped small
    1 tsp dried rosemary, chopped
    1/4 cup red lentils
    1/4 cup brown lentils
    1/4 cup red quinoa
    1/2 cup pearled barley
    1 bay leaf
    1 tsp salt (or amount to adjust to your taste - for nutrition information this recipe used 1 tsp)
    fresh ground black pepper to taste.

Directions

Saute the onion in a little oil, add the garlic after the onion just starts to brown. Add the meat and continue to saute until the meat starts to brown. Add celery, carrots, and 2-3 quarts of water. After the liquid is simmering, add the barley, quinoa, lentils, rosemary and 1 bay leaf. Simmer about 45 minutes. Taste and adjust seasonings by adding salt and pepper to your liking (I use less than 1 tsp of salt and a few cranks of fresh pepper). Simmer another 10-15 minutes.
