    She also recommends adding feta cheese to this recipe, and serving the tabbouleh in halves of pita bread.

Directions

Place the bulgur in a large bowl, pour in 1.5 cups of boiling water, add 2 ounces lemon juice, the olive oil, and 1.5 teaspoons kosher salt. Stir, then allow to stand at room temp for about an hour.

Add the scallions, mint leaves, parsley, cucmber, tomatoes, 2 teaspoons salt, and pepper, if desired. Mix well and serve, or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.
