Ingredients

2 c All-purpose flour
3/4 c Splenda Sugar Blend for Baking
3/4 tsp salt
1.5 tsp Baking powder
1/2 tsp baking soda
1 c cranberries, chopped
1/2 c walnut, chopped
1 egg
2 Tbl Canola Oil
3/4 c Orange juice
1 Tbl Orange Zest, grated
Directions
Preheat oven to 350 F and spray a loaf pan with cooking spray.
Combine flour, sugar, salt baking powder and baking soda. Add cranberries and walnuts and stir to coat with flour mixture. In a seperate bowl, mix together the egg, oil, juice and zest.Pout the egg mixture into the flour mixture and stil until just blended. Spoon the batter into the prepared pan.
Bake for 50 minutes or until toothpick, inserted into the center, comes out clean. Cool for 10 minutes, then remove from pan and cool completely on a wire cooling rack. Makes 10 slices.
