Super rich with a creamy texture, this is NOT a low cal food! I was served this cheesecake-like pie recently and decided to get the recipe in case I ever want to splurge on my calories! Original recipe says that this is 10-12 servings, but 1/16 slices are plenty because of its incredible richness. Super rich with a creamy texture, this is NOT a low cal food! Ingredients

    Crust:
    1 3/4 cup Chocolate Wafer Cookie Crumbs
    1/4 cup Brown Sugar, packed
    1/4 cup Butter, unsalted
    -------------------------
    Filling:
    2 cups Creamy Peanut Butter
    2 cups Granulated Sugar
    16 oz Cream Cheese, room temperature
    2 Tbsp Butter, unsalted
    2 tsp Vanilla Extract
    1 1/2 cups Light Whipping Cream
    -------------------------
    Topping:
    4 oz Semisweet chocolate
    3 Tbsp + 2 tsp Hot Coffee

Directions

Combine crumbs, brown sugar and 1/4 cup butter. Press into bottom and halfway up sides of 9-inch springform pan.

Beat peanut butter, sugar, cream cheese, 2 tablespoons butter and vanilla in large bowl of electric mixer until smooth and creamy. Beat cream until soft peaks form. Fold whipped cream into peanut butter mixture. Spoon into crust. Refrigerate 6 hours.

Melt chocolate with coffee in double boiler over gently simmering water. Spread atop filling. Refrigerate until firm.
