2 chicken breasts
1 sachet mediterranean couscous
1 tin Tomatoes
Handful of yellow peppers
handful of red peppers
handful of green peppers
2 tbsp sweetcorn
2 tsp italian herbs
1 clove garlic.
Add in the tin of tomatoes and squirt in about a tablespoon of tomato puree and the peppers and cook the peppers off a bit. Leave to simmer for a few minutes.
Add in the pepper, herbs, garlic and sweetcorn and leave to simmer a little longer
Prepare the couscous according to the packaging and when cooked, add in to the rest of the meal. Stir thoroughly.
Heat up the tortillas, and either serve pre-wrapped, or in a bowl.
For a serving for 2, take out one of the chicken breasts (509.9 kcal)
