Annie's Tabouli

Ingredients

    1 3/4 c. cracked bulghur wheat
    1 3/4 c. boiling water
    2 1/2 c. chopped parsley
    1/2 c. chopped mint
    4 Roma tomatoes, diced
    1 large cucumber, diced
    4 green onions, sliced
    3/4 c. olive oil
    3/4 c. fresh lemon juice
    salt and pepper to taste

Directions

Pour wheat and boiling water together and allow to sit for 30 minutes to absorb. Toss in parsley, mint, tomatoes, garlic, onions and cucumber. Mix together oil and lemon juice with salt and pepper and pour over salad. Chill for 1 hour and serve.
