When Asparagas is in season, this is a delicious salad with all fresh herbs and fresh feta cheese. The basic recipe is 174 calories per serving. Ingredients

    Prepare asparagas and pine nuts and let cool.

    Whisk 3 T. olive oil, 2 T. lemon juice, and 2 T. dijon mustard. Add 1/4 cup each finely chopped, fresh chives, cilantro, and basil. Thinly slice 1 cup red onion. Salt and pepper to taste. Toss all the ingredients in the dressing and serve.

Directions

Serves 8 with 4 to 5 asparagas stalks.

Cut asparagas into bite size 2: pieces. Blanch the asparagas stalks for 90 seconds and the heads for 60 seconds, then drain, and chill quickly.

Toast the pine nuts for 10-15 minutes in a 350 degree oven, then let cool.
