Shrimp Scampi

Introduction

This lightened version doesn't use any butter but you don't even miss it. I add extra garlic just because I love the flavor. This recipe originally called for 1/2 tbs of salt but I omit the salt completely and add other spices or I saute a dash of crushed red pepper. Ingredients

    28 peeled, deveined, tail off shrimp
    1/3 cup dry white whine
    1 Tbs. extra virgin olive oil
    3 garlic cloves, minced
    1/4 tsp. black pepper
    1 tbs. dried parsley
    1 cup cooked whole wheat parsley

Directions

Heat the oil in a pan for a minute. Add the shrimp and cook until starting to turn pink. Add the garlic and pepper, saute for a couple of minutes. Add the wine and bring to a boil. Allow the liquid to reduce to desired amount/consistency. Reduce heat and add the parsley. Serve 14 shrimp over 1/2 cup of cooked whole wheat pasta.
