DMC's Pasta Sauce (8oz=1serv)

Ingredients

    1/3 cup Extra Virgin Olive Oil
    2 med onions, chopped fine
    2 garlic cloves, minced
    1 (28 oz can ) Hunt's Tomato Sauce
    1 (28 oz ) fresh Roma tomatoes)
    4 oz (almost 1 - 6oz can) Hunts Tomato Paste
    3 Tbsp Red Wine (Cabernet Sauvignon)
    3 Tbsp. Sugar
    1 Bay leaf
    1 Tbsp dried Parsley
    1/2 tsp Garlic Powder
    1/2 tsp dried Basil
    1/4 tsp dried Oregano
    1/4 tsp Salt

Directions

In a large heavy bottomed sauce pot, saute the onions in the olive oil until translucent. Then add the minced garlic, stirring it through. (Do not let it get brown or burnt.) Next add the canned tomato sauce, tomato paste, red wine, and sugar. Puree the whole tomatoes in a blender and then pour the liquid into the pot through a fine metal strainer to catch any reamaining tomato skins and seeds. Stir thoroughly until tomato paste is completely incorporated. Now put in all of the dried spices, stir, and bring the pot to a boil. Once it comes to a boil, cover it, and let it simmer on "Low" for 2-3 more hours (3 hours is best*) After 2 hours, taste and adjust seasonings as needed. Enjoy!
