Introduction

I make my own secret recipe for the salsa.
You can use Ground Turkey meat also, But I'm a Beef lover so I use Black Angus Ground meat. 97 % FAT FREE
I Bought the Tortillas from Mexico online only 1 Weight Watcher Point for 2 tortillas. You can use your favorite Corn high fiber tortillas for this recipe but you might have to calculate the Point Value (calories) in for your substitutions.
Only 6 Weight Watcher Points for my version.

Ingredients

    1 lb lean ground beef
    1 package taco seasoning mix
    3/4 C. water
    12 Tortillas de Nopal (Made with Cactus juice)
    1 T Cooking Oil (I use Enova Oil Brand)
    Shredded Iceburg Lettuce
    1 Tomato Diced
    Bunch Scallions chopped
    2 Serano peppers chopped fine
    3/4 Cup Fat Free Shredded Cheese
    Salsa of your Choice (low calorie preferred)

Directions

Brown meat in large skillet on medium-high heat. Drain fat.
Stir in Seasoning Mix and water.
Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally, Spoon in to warmed Tortilla de Nopal Shells that have been fried in the 1 T. Cooking Oil (OR if you don't want to add Oil you can warm them in the Microwave) for soft shell tacos.(my favorite way)
To assemble the Taco:
Nail your Tortilla Shells to the table (or lay on a plate) and Add 2 T taco meat to each shell. I put about 2 T cheese on each taco 1 T. on the meat to melt and 1 T. on top.
Next after adding 1 T. cheese add a little of the lettuce, Scallions, Serano Peppers and top with the other Tablespoon of cheese and Salsa.
You can also add other toppings of your choice but be sure to add in the calories.
Guacamole, Fat Free or Low Fat Sour Cream, (MY Secret Salsa Recipe lol).
I Serve Spanish Rice (my style) on the side with My Fat Free Pinto Beans Processed in the Food Processer)
