Banana-Flax Muffins

Introduction

Moist banana muffins made with omega rich flaxseed meal. Moist banana muffins made with omega rich flaxseed meal.
Number of Servings: 12

Ingredients

    1/2 c flax meal
    1/2 whole wheat flour
    1/2 cup wheat germ
    3 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 egg
    4 ripe bananas
    3/4 unsweetened applesauce
    1/2 cup sugar
    2 Tbsp melted margarine

Directions

Mix wet ingredients in large bowl. Sift dry ingredients in another bowl. Add all together and mix well. Divide into 12 muffin cups and bake for about 20 minutes at 350 degrees or until done.

  • Excellent! I was out of wheat germ and used oat bran instead. Still came out good - next time I'll try the wheat germ. I baked these at 350 which worked. (oven temp not listed) - 1/22/08
