Spinach Lentil Soup

Number of Servings: 8

Ingredients

    8 cups water
    1 cup lentils
    .5 tsp. black pepper
    2 TBS. butter, salted
    1 tsp. thyme, ground
    1 jalapeno pepper
    2 lb. (32 oz.) spinach, fresh
    .5 medium onion
    2 large potatoes
    3 medium carrots

Directions

Makes 8 two cup servings

Fill soup pot with water and lentils.
Bring to a boil for ten minutes. Add all other ingredients and turn heat to medium for about 50 minutes.
Serve hot.
