Ingredients

1 lb ground chicken
4 Tbsp. fresh lime juice
salt
1 to 2 Tbsp. thai fish sauce
1/8 tsp. cayanne pepper
2 small shallots, chopped
1/2 cup fresh cilantro, chopped
1/2 cup fresh mint leaves, chopped
1/4 cup crushed peanuts
1 large head of lettuce
Directions
In a saucepan, combine chicken with 2 Tbsp. lime juice, 1 cup of water and a pinch of salt. Over midium heat, bring to a simmer, stirring to break up meat, until cooked throught. Drain water thoroughly from chicken and place in a bowl. Toss chicken with fish sauce, cayenne, shallots, cilantro, mint, remaining lime juice and peanuts. Place chicken mixture in a serving bowl and serve with a plater of open lettuce leaves. Allow your gurests to spoon in chicken mixture into a lettuce leaf, roll and enjoy!
