Bill's Skillet Chicken and Piccolini

Ingredients

    3/4 c. (1 med.) Bell Pepper
    3/4 c. (1 med.) Yellow Onion
    4 toes Garlic
    1.5 tsp Olive Oil
    2 cans Low Fat Chicken Broth
    3# Boneless Skinless Chicken Breast (cubed)
    6 cups (1 pound) sliced fresh mushrooms
    1 pound box Piccolini pasta
    1 tsp Thyme
    1 tsp Parsley
    1 tsp Oregano
    3 tsp Corn Starch
    Salt to taste
    Coarse Black Pepper to taste
    Dash of Cayenne pepper

Directions

Heat olive oil in cast iron skillet. Add peppers, onsions and garlic. Saute until tender. Add mushrooms and saute until they sweat out. Cube chicken breast and add to seasonings and mushrooms. Add thyme, parsley, oregano, salt and cayenne. Saute until chicken is almost thoroughly cooked (about five minutes). Add broth. Bring the pan to a boil. Mix corn starch with a little bit of cold water and then stir that into the chicken stock. Bring it back up to a boil for about two minutes. Cook Piccolini pasta according to package directions. Do not rinse after cooking, only drain. Then add the pasta to the chicken mixture and mix well. Enjoy!

  • This is really good! The herbs provide lots of flavor without overwhelming the dish. The cayenne adds just the right amount of zing to make this heart-healthy recipe satisfying to the palate. I added just a tad more cornstarch to thicken. Family liked it too! Will definately make it again! - 6/30/09
