Banana Oatmeal Muffins



Introduction

Moist and great for breakfast or snack. Moist and great for breakfast or snack.
Number of Servings: 12

Ingredients

    1/4 c butter
    3/4 c brown sugar, packed
    1 egg beaten
    1 c milk, nonfat
    1 c rolled oats
    1 c flour
    1 Tbsp baking pwder
    1/2 tsp salt
    1/2 tsp allspice
    2 medium bananas, chopped

Directions

Cream together butter & brown sugar, mix in egg and milk. Micx together oats, four, baking powder, salt and allspice. Add to creamed mixture

Stir in bananas. Spoon into greased or paper lined muffin pan, filling almost full.

Bake at 400 degrees for 20 to 25 minutes until golden brown.

    These are great, moist muffins that I will make again. To fit my personal desire for a rounder top muffin I added an extra t. of baking powder the second time I made them. They are great both ways. - 7/11/09

    This was a good recipe - I didn't have allspice so I just used cinnamon. These are moist, not too sweet muffins, and will go perfectly with a smoothie for breakfast. Thanks so much for sharing! - 7/14/10

  • If I had made the recipe as shown, the batter was REALLY soupy. I was afraid it wouldn't firm up enough. So I added an additional 1/2 C each of flour and oats, and an additional 1/2 tsp baking powder. Then threw in a couple of TBSPS of unsweetened applesauce, to be sure they'd still be moist. - 8/23/13

  • These muffins were delicious! Moist and lovely. The mixture turned out very liquidy so I poured it into the tins rather than scooping it in. Thus, the muffins barely rose. On the bright side, they all came out the same height! The batter made 21 muffins, yikes! I added chocolate chips to half. - 5/23/11

  • I made these and they turned out great! I changed a few things as we didn't have them, like for the baking powder I used self-raising flour. Also i mixed all the ingredients in one bowl, not two. Thanks for the recipe. It's incredible! - 10/5/09
