Chicken Gnocchi Soup

Chicken Gnocchi Soup

Number of Servings: 8

Ingredients

    1/3 cup butter
    2 cloves of garlic (minced)
    1 lb. chicken (cut in small pieces)
    1/3 cup flour
    1 cup celery (diced)
    1 cup fresh spinach (chopped)
    2 1/2 cups skim milk
    1 1/2 cup heavy cream (half/half)
    3 chicken boullion cubes
    Cracked pepper to taste
    2 cups of Gnocchi

Directions

On medium heat, melt butter in a soup pot
Add garlic and sauté
Add your chicken and cook through out
Stir in flour; mix well until the flour is cooked into the chicken.
Add milk and cream
Add celery and spinach
Add three bullion cubes
Add gnocchi
Mix ingredients well until soup thickens; stirring occasionally
Cover and simmer for 10 minutes

    I agree this is one of my favorites. Olive Garden now has it on their menu and call it "Creamy Chicken Gnocchi Soup"., I have been making mine with fat free evaporated skim milk to reduce the calories. It's still delicious. - 4/5/10

  • This was DELICIOUS!!! I cut up the celery into tiny pieces since that is the only way Hubby will eat it. Also,I added about 1/2 cup of shredded carrots. Will definatly be making it again. - 2/3/10
